2 Ingredient Muffins


I told you that my Gram wasn't above taking shortcuts and using pre-packaged things in her baking, and this muffin recipe sure proves it! When I first found this recipe card I couldn't help but laugh and shake my head. "No way will this ever work" was my first reaction.

I thought about it some more, and realized that making muffins from just these two items did make sense, in a weird way. All of the typical muffin-making ingredients are present, in one way or another.

The final result is a muffin that's a bit more like a sweet tasting biscuit than a moist muffin, but I think that they're worth making once or twice, just for the novelty of it. As you hand one of these muffins to your friend/significant other/child you can shock them by saying that you made it using only 2 ingredients-- trust me, they will be so darn impressed with you that you will appear as a God to them, for at least 5 minutes... Well, maybe not, but they'll at least be intrigued.

I can hear you gnashing your teeth and shouting "just tell me what two things I need to make the stupid muffins already!" so without further ado:


INGREDIENTS
2 Cups Self-Rising Flour
2 Cups softened Vanilla Ice Cream (any brand)

TA-DA! That's it. Think about it, it makes sense.

Preheat your oven to 450.

Put the ice cream and flour in a bowl. Let the ice cream get SUPER melty.


This is not melty enough.

It's cold in my apartment right now, and I'm not always the most patient person, so I tried to mix it before the ice cream melted all the way. Bad idea. I was rewarded with what looked like floury frozen yogurt. Yuck.


I definitely didn't end up just shoving the bowl in the microwave for a minute to melt the ice cream, if that's what you're thinking.

Mix the ingredients together.

Put liners in your muffin pan.

The batter will be pretty sticky, but use a tablespoon/your fingers to  scoop it in to the liners. You can see below how thick and goopy it is.


Bake for 20-25 minutes.


Just like magic, you'll have muffins! If you want, feel free to toss in some raisins or orange zest to the batter. I did that for half of the batch, and they were pretty yummy.

I looked up ice cream muffin recipes online after I made these, and found out that a lot of people hate them, so... Be forewarned, if you decide I make them, I suppose. People seemed to be unhappiest when they used more wacky ice cream flavors, like Ben and Jerry's or anything fruit flavored, so I personally will stick to plain vanilla if I make them again, and add in anything else I want separately.

  1. that is very weird, but you're right - it does make sense. thinking through the ingredients of both does make up the main ingredients needed, though by no means in measures all that great for a typical muffin.

  2. Yes, exactly. It'll do in a pinch, if you have a sudden dire need for something muffin shaped, but really it's better to just make plain ol' muffins. It was fun to see that it did (kind of) result in muffins though.

  4. it's always nice to find new ways to do things easier, but to use something like Haagen Dazs icecream which is great by itself seems like a waste. I'm sure if I get a lesser quality icecream I'de try it. thanx for the idea. Get us other great ideas.

  7. heres another 2 ingredient for a cookie.
    1 spice flavored cake mix
    1 can (15oz) pumkin (not pie filling- pure pumkin)
    mix together drop by tsp and bake 350 6-8 min depending on your oven - watch your fist batch and as soon as the firm up the are done, mine are usually don n 7. very moist cookie.

  8. Queen, I bought the Haagen Dazs as part of an evil plan to eat all of the ice cream that wasn't used in the recipe (Plan: successful).

    Carsten, just did some quick math, it should be about 156 calories per muffin.

    Those pumpkin cookies sound tasty, I'll have to make them next time I get a craving for something pumpkin-y and don't want pie!

  12. These would be perfect for my 5-year-old daughter to make. Easy enough for her to mix them and scoop them all by herself without a ton of measuring and adding ingredients at the appropriate time, etc. Thanks!

  23. I made these with a honey & sweet cream icecream, topped them with raw sugar & raspberries. Came out more like a sweet biscuit. I also made them mini muffins. Maybe that was the cause for the texture? Not bad though.

    Keep in mind that these were the numbers based on the ice cream and flour that I used. But it gives a general idea.

  32. great idea for kids' school bake sale or any kind of last minute event that requires few ingredients and little time. i'll be sure to pick up vanilla ice cream whenever it's on sale and keep some self-rising flour on hand.
